Salad days

Believe it or not, I am still cooking chicken every Sunday for the week. And although fitness levels wax and wane, I credit these preplanned lunches for keeping me at about the same weight I was last year when I stopped actively dieting.

WM still has his chicken in sandwich form. I usually have mine with a side of steamed mixed vegetables or edamame. Last Sunday I decide to be even more Pinteresty (Pinterestrier?) and make the mason jar salads that were so popular a few years back. I used this site as a reference for how to stack the vegetables in the jar. I also made my own vinaigrette, thanks to Martha Stewart’s basic vinaigrette recipe. Martha forever.

I had my reservations about it but even on the last day of the workweek, the vegetables were still green and/or crispy.

I packed the jars with dressing, tomatoes, cucumbers, carrots, almonds, and baby spinach leaves. I cube the chicken and keep it in a separate container and add it to the salad at lunch.

Things I’m doing this week to improve the salads:

> Swap out the almonds for onion.
> Add more garlic and possibly some of my Penzeys stash to the dressing to kick it up.
> Bring a bowl to work for mixing/eating the salad because the paper plates there are small and wasteful.

Friday 5: Food Me Once; Food Me Twice

Hello, refreshed blog! Let’s do a Friday 5! Remember those? I do!

This week’s topic is “Food Me Once; Food Me Twice.” Speaking of which, I’m going back and cleaning up categories and tags. So far I have 55 posts with the “diet” tag. You’d think I’d be better at it by now.

I likely paid $45 for this Disney meal.

1. What do you like on your frozen yogurt?
I’m pretty basic. Hot fudge, chocolate chips, sno-caps, jimmies, and a splash of caramel are my standbys. Occasionally I’ll squirt hot peanut butter sauce or marshmallow sauce in there too.
2. How do you feel about hot breakfast cereals?
I love Cream of Wheat/Farina type cereals, but they are a million calories for a serving that I’d find acceptable (sighs, tags this post “diet” too). I’m a huge fan of oatmeal with a spoon of peanut butter stirred into it for some added protein.
3. What did you last put brown sugar in or on?
I made chocolate chip cookies about a month ago. Otherwise, I don’t add sugar to anything.
4. What’s a food item you willingly overpay for?
Any food at a Disney park. One hot dog? TAKE MY $10. Oh, to top that, sometimes I’ll drink Starbucks AT Disney, so that’s paying Disney food prices on top of an already price-inflated drink.
5. What did you last add vinegar to?
My kitchen sink drain, along with some baking soda for a drain volcano!

This week kicked my ass. We have eleventy-hundred projects going on at work at the same time, and I haven’t been this frazzled since the C-P days. And I had my yearly appointment with Doc Ladyparts on Wednesday, which always puts me in A Mood. (Next up are a mammogram and a skin check in April. Wheeee getting old is so much fun!)

This weekend I’ll likely just wrap up in a quilt and retag posts. And find a font size that doesn’t make my blog look like it was checked it out from the Large Print section of the library.

Easter Sunday

Happy Easter! This weekend zoomed by in a puff of flour. I spent yesterday baking Easter bread and ham pies with mom…and then gave them all away, like the magnanimous person I am. Or rather, the person who would eat them all if they were still here.

I'm happy Max is here for another spring. It was touch-and-go for a bit.

Spending: Quality nephew time. He’s yummy.

Springing: The high temps have been scooting into the high 60s and low 70s lately. That with the clock change means I can sit in the yard after work.

Losing! Yo! I’m now down 21 lbs! (probably 20 now, thanks to the 3 pieces of Easter bread I quaffed tonight) And I’m not even halfway there yet. Ugh. (mood deflates)

Watching: Some more Fuller House. They need to recast DJ’s middle kid. He’s from the “SCREAMING = Cute” school of acting. Or send his character off to Judy Winslow’s boarding school. I hope DJ ends up with Matt, the cute veterinarian. I don’t remember Steve being such a manipulative twit.

Polished: This week’s Essie color is the new “Lounge Lover” It’s a little more hot pink than pinky peach, but I still love it.

OMG STILL READING: Hamilton. It’s not that it’s bad, it’s just so long! I’m only halfway through and my eloan is up tomorrow. Luckily, I have a paperback copy incoming. Unluckily, it’s too large to lug on the train every day, so it’ll be some at-home reading.

Working: Heavy on the meetings at work this week, but I think I’m taking a personal day on Friday.

Healing: I’m on my second week of Soolantra for rosacea. Week one was … difficult … as I’m apparently in the “it gets worse before it gets better!” camp. I’ve been loading on the moisturizer (jojoba oil in the morning and Cerave PM at night) and the redness and flaking are starting to subside. Thanks goodness.
